Thanks for your question. I manage my workload by making a list of everything I could do in the next few days and prioritising based on what I will enjoy and what is most urgent. I also try to be open with my team and manager about how I am getting on, and whether I need support or whether I can take on more work.
From my experience on the data science graduate scheme, I have found that most teams make this very easy by using boards to visualise the progress of tasks, and by having regular allocated time to discuss how we are getting on.
